Oto (Traditional Ghanaian Meal)

Ingredients
Yam
Onions
Tomato paste/sauce
Garlic
Chili pepper
Palm Oil
Eggs
Salt
Preferred seasoning
Water

Instructions
1. Pour palm oil in saucepan, when hot add diced garlic.
2. Add chopped onions after a few seconds and allow to fry.
3. Add tomato paste/sauce then leave to cook for some minutes. Add salt, seasoning and a little water. 
4. Leave to cook. 
5. Once cooked, set the sauce aside.
6. Cut yam into desired sizes, preferably small and wash them.
7. Put them in a pot of water with salt then place on fire to cook.
8.Boil eggs as the yam cooks.
9. When the yam is ready (should be soft), set aside.
10. Mash yam a little then gradually add the sauce as you continue to mash till it is smooth and properly combined.
11. Plate it like a mound and place egg on top (see picture for reference).

Oto with boiled eggs



Please note: Measurement of items should be based on the number of people being cooked for.

When preparing the sauce, some people cook it without the tomato paste but I think it makes it taste better than just with the oil.
