SPAGHETTI in BEANS SAUCE
Ingredients
1 cup black eyed beans
300g spaghetti
3 eggs
1 onion
120g tomato paste
2 fresh tomatoes
4 scotch bonnet peppers
½ ginger root
2 garlic cloves
¼ sunflower oil
1 ¼ seasoning cube
Salt to taste
1. Wash the beans, pour it in a bowl of water, add sate and ½ seasoning cube. Put pot of beans on fire and set aside when cooked.
2. Put spaghetti in a pot of water, add salt and leave to cook. Once cooked, set aside.
3. Chop onions, tomatoes, chili peppers and ginger. Blend them together and set aside.
4. Heat oil in a pan. Dice garlic cloves and fry till slightly brown.
5. Pour in the blended mixture and leave to cook.
7. Add salt and ½ seasoning cube.
8. Add cooked beans, stir and leave to simmer.
9. Beat eggs with salt and ¼ seasoning cube, spray pan and put on fire. Once heated, pour in egg mixture. Flip when sides are firm. When done, set aside.
10. Mix spaghetti and beans sauce together.
Serving Suggestion
Spaghetti in beans sauce on a bed of fried egg garnished with chopped tomatoes and scotch bonnet pepper.
PS: Spaghetti and fresh tomatoes taste great together.
