SWEET POTATO PORRIDGE


Ingredients
5 sweet potatoes (regular size)
2 garlic cloves
1 onion (regular size)
6 chili peppers
1 cup palm oil
Water
Salt to taste

Instructions



1. Wash, peel and chop sweet potatoes into small cubes
2. Chop half an onion into small pieces
3. Dice garlic
4. Add chopped sweet potatoes and onion to a pot of water with chili pepper. Put on fire to cook after adding salt.
5. When it is cooked, mash everything together to a preferred consistency (I like it slightly lumpy).
6. Pour palm oil in a saucepan with diced garlic and put on fire.


7. Dice half an onion, add to oil and continue to stir fry.
8. After 3 minutes, pour oil on mashed potatoes and stir.
9. Leave it to simmer for 2 minutes.
8. Remove saucepan from fire.

Serving Suggestions
Sweet potato porridge garnished with palm oil and diced onions.
Sweet potato porridge with roasted groundnuts.
