KAAKLO
Ingredients
5 very ripe plantains
1 cup tom brown powder
2 tablespoons flour
3 chili peppers
½ onion
Salt to taste
½ ginger
2 cups vegetable oil
Instructions
1. Cut and grind, crush or blend plantains to desirable texture/smoothness then set aside.
2. Grind onions, chili pepper and ginger.
3. Add ground mixture to crushed plantains.
4. Add tom brown powder & flour for thickness & firmness.
5. Mix thoroughly till smooth with no lumps.
6. Pour oil in a pan & heat.
7. Once heated, scoop some of the mixture in a ladle and put it in the hot oil.
8. Use ladle to fix mixture in the oil to get the desired shape (when shallow frying).
9. Continue frying till mixture is finished.
NB: Plantains should be the very ripe type. The skin should be completely/partially black.
For it to be very spicy, add more chili pepper and ginger.
Fry on low heat or deep fry to prevent it from burning.
This serves 3 - 4 people.

Serving Suggestion
Kaaklo with groundnuts/peanuts (most suitable as a snack)
Kaaklo with beans in palm oil (most suitable for lunch or supper)
