STRAWBERRY PANCAKE
Ingredients
1 egg
3 small strawberries (crushed)
1 tablespoon of brown sugar
¼ teaspoon of salt
12 tablespoons of evaporated milk
Non – stick canola oil spray
4 tablespoons of pancake flour (sieved)
1 tablespoon of strawberry solution (optional)
4 small strawberries (optional)
Chocolate syrup (optional)
Instructions
Put flour in a bowl and set aside.
Beat the egg in a bowl with the milk.
Add salt and sugar and beat together.
Add strawberry solution and mix together.
Gradually add flour into the mixture whiles you beat or whisk together.
Add crushed strawberries and mix.
Spray pan with non – stick canola oil spray.
Once heated, pour 1/3 of the mixture in the pan.
Flip when sides are firm and bubbles appear on the surface. Remove from pan after a minute or two, depending on how hot the pan is.
Repeat same procedure for the rest of the mixture.
NB: You can dice strawberries instead of crushing them or use strawberry syrup if you want to.
Use more flour and milk if you prefer a very fluffy pancake.
Add more sugar if you have a sweet tooth.
I mixed sweetened chocolate powder with warm water to create the syrup since I had none.
I used ‘pickled’ strawberries and that is how I got the strawberries soft enough to crush and the solution.
Serving Suggestion
Three pancakes garnished with chocolate syrup and strawberries, served with a cup of coffee.
