EGG STEW
Ingredients
3 eggs
1 medium size onion (chopped)
2 medium size tomatoes (chopped)
¼ tin tomatoes (80g)
4 chili peppers (diced)
¼ cup sunflower oil
Salt to taste
½ maggi cube
2 garlic cloves (diced)
½ ginger (ground)
Instructions
1. Pour oil in a pan. Once heated, fry garlic for a minute or less then add chopped onions, ground ginger and diced chili peppers.
2. After a few minutes, add tin tomatoes.
3. When it dries up a little, add chopped fresh tomatoes.
4. After a few minutes add water, salt and maggi to your tasting.
5. Put a little maggi/salt and water in a bowl and mix.
6. Break 3 eggs and add to mixture then beat altogether.
7. Once the stew is almost cooked, pour in the eggs and leave to simmer.
8. Stir after some minutes. Take pan off the fire when cooked.
NB: Do not stir the stew right after pouring in the beaten egg.

This was one of my favourite as a kid and now my mum doesn't do anymore and she doesn't have time to teach me. I look forward to trying it. I'm not really a fan of garlic in stew, is it possible to do without garlic?

It really is delicious. Lol. Yes u can, I use it to improve upon the aroma. Sometimes eggs have a strong scent and it can make you nauseous. (Also any other protein that I don't have to steam before adding to the sauce). You can substitute it with ground nutmeg if you encounter that problem & need a solution but if not,
